Growing up in Romania, ferments were a staple of Val & Mihaelas childhoods. Since moving to Ireland almost 20 years ago the couple have remained curious about fermentation and naturally sought out fermented foods during their travels through Asia, the Nordic countries and beyond.
The pandemic provided Val the opportunity and time to reignite his passion for fermentation. Foraging local ingredients on his bike and supporting suppliers badly hit by the lockdown, Val began to develop a range of ferments. A few months and many, many jars later, Val & Mihaela decided to share the creations with others. They were surprised by the positive reaction the Krauts and Hot Sauces received, particularly from their Irish friends and family. Around this time, Michaela began training as a Psychotherapist and became interested in the mind-gut connection. Combining both their passions, the couple embarked on a journey to create a brand that would focus on fairness for everyone involved, to the environment and to our mind and body. Since Fairmental was born in 2020, Val & Mihaela have continued to grow the business
and are delighted to open their first retail & deli space at 10 Grand Canal Street Upper, Dublin 4 this February.
